The meal commenced with an amuse-bouche featuring cheese bites reminiscent of 'upscale Cheez-Its', a 'beautiful' small mound of peas on a pastry-like base, and beef tartare accompanied by a micro salad that UA described as 'fantastic'. Following this, they enjoyed smoked confit egg yolk paired with crispy shallots, crispy chicken skin, and wild garlic mousse, which UA likened to 'a blend of thick chicken soup and foam'.
